I love Seafood in Summer and found this traditional Spanish dish over on MindFood It only takes 30 mins and its fresh, seasonal ingredients are a great match with the all natural flavour from our Chicken Stock.
2 tablespoons good quality olive oil
600g boneless white fish fillets, in 5cm pieces
500g green prawns,
a dozen scallops,
1 brown onion
2 garlic cloves
2 white anchovies
2 tsp smoky paprika
½ tsp saffron threads
1 cup Spanish rice
400g can diced tomatoes
2½ cups good quality chicken stock
¼ cup flat-leaf parsley, to serve
1 lemon, wedges
